Recipe: Quinoa with Beetroot, Kale and Chia Seeds

Here I am with yet another “Beetroot” recipe. I love Beetroot (if you hadn’t guessed). It tastes great and it is so good for you too!

This little recipe is one I like to whip up for lunch. It gives me the energy boost I need as I am usually quite tired by the time lunchtime comes around. Plus it is really easy to make. I think I should call it “The Handful” recipe, as I just chuck in a handful of (almost) all the ingredients.beetroot1

Here’s how it’s done

You will need:beetroot3

Approx 3/4 cup of quinoa

1 tablespoon of chia seeds

1/2 tablespoon beetroot powder

1 tablespoon kale powder

A handful of mushrooms (chopped)

A handful of cheery tomatoes (I keep these whole)

A handful or sundried tomatoes

Water, approx 2 cups

Throw all the ingredients (except for the beetroot powder and kale powder) in a saucepan and add water  (you will need to how much water you will need. I like to use enough to cover all the ingredients plus about 1cm more water. You need to allow enough water to bring to the boil and let the ingredients simmer).

Once the liquid starts to reduce, add the beetroot and kale powders and stir through.

Stir often and let the extra liquid reduce until the consistency is like a porridge.

Garnish with grated parmesan cheese and enjoy!
